Cooking With Leftovers
It’s the festive season, the time for continuous grazing on platters a plenty. It’s the busiest time of year for the calorie fairies who visit our wardrobes at night to sew our clothes a little tighter.
It’s also the time of year when we produce the most food waste. Compared to the rest of the year, food waste increases by 30% over the holidays. According the the United Nations Food and Agricultural Organisation, if food waste were a country, it would be the 3rd highest emitter of greenhouse gases after the US and China.
For every brussel sprout wasted, we’re also wasting the resources that went into growing, packaging, and transporting that brussel sprout.
So if you’re hosting this Christmas, here are some tips to reduce food waste:
Before you go shopping, make a list and stick to it.
Clear some space in the freezer to store leftovers.
Have some containers at the ready and offer your guests leftovers to take home.

Don’t throw those potato peels away, instead make some healthy chips! Play around with the flavours (my go to is a sea salt and cracked black pepper). Why not try veggie chips too using your carrot, parsnip, sweet potatoes…
Whatever you are cooking, don’t forget to make your stock pot. This is such a handy freezer essential that you can whip out for an extra flavour kick to that ramen or risotto. Just adapt the recipe to suit you!
I don’t know about anyone else but I love mash potatoes. Which means I usually make way too much (quite deliberately so that I can continue to eat mash potatoes for many days). Bubble and Squeak is an easy way to incorporate all those leftover veggies too.
More mash related recipes. This time with sweet potatoes! Make these easy pancakes and add your choice of toppings. Maybe you’ve got some leftover fruit for the family pavlova, or go naughty with some maple syrup or icing sugar.
